how I can choose the language from english to german?

If you are referring to the Application Language go to menu Edit (Win) or Acrobat (Mac) -> Preferences, choose "Language" category and select "Choose at application startup" for Application Language. You will need to restart Acrobat.

If German is not available when you restart Acrobat you will need to modify Acrobat installation to add the language you need. If you can't do this you need to download the full installer with all languages, you can donwnload it from here: http://helpx.adobe.com/acrobat/kb/acrobat-downloads.html

You can do this in the applications's preferences dialog. Select the "Language" category and change the language. Depending on how you installed the application, the language files may not be on your computer, and you will have to re-run the installer and e.g. install the German translation.

If "German" does not show up in the list on the language selection dialog, select to be prompted for the language the next time you start the application. I've seen that work better than picking the language in the dialog.
