I want to use a color other than yellow to highlight. How do I do that?

Press Ctrl+E to open the Properties bar, and then select the highlight comment and you'll be able to edit its fill color.

I use an Apple so "Control E" appears to come from the PC world. Can you clarify for a Mac?
Open any PDF document, go to menu View -> Comment -> Annotations, right-click on the "Highlight text" tool, choose "Tool Default Properties" and you will be able to change its default color.
