Well, FormCentral is something of the past.
So, it would have to be something using the PDF documents.
Very first question: are the PDF documents flattened (meaning that there are no more form fields), or are the form fields still in the documents?
In the second case, you could use Acrobat to export the data to a spreadsheet, from where on you can do whatever (essentially) Excel allows. Or you could make an Action to export to one of the supported formats (FDF, XFDF, CSV, etc.), and process those files.
A more elaborate solution would be using an auxiliary application (in PDF) to retrieve the form information and (pre)process it (such as create your controlled order of entries, do some calculations, consolidate entries, create a report, and so on).
If the documents got flattened, the very first thing would be to get the data back. There are some ways to do it, requiring some programming and fiddling with the documents, to recreate the filled fillable form, from where the processing would be as described above.
