Last week it became impossible to open PDF files sent as email attachments. They tried to open as Word files. I was able to somewhat solve the problem by saving to my desktop and then using "Open as: Acrobat X or Acrobat Reader".Now I discover that all the old PDF files stored on my computer have been mysteriously converted to Word files and have to be opened the same way.Have I inadvertently messed up a setting or something?

It's not possible that the files were converted to Word documents, just like that. Probably you accidentally associated them with Word, that's all.
Go to Acrobat, Edit - Preferences - General and click the "Select Default PDF Handler" to associate them back with Acrobat.
