Scanning is not simple. A good scan depends upon the quality of the source document. Background colors, poor type quality, low contrast. etc make it harder for scanners to identify the text on a page.
There are also better OCR programs than Acrobat. Many scanners come with supplied OCR software and this may be more powerful, produce a better result, and provide more file types for saving the results of the scan than Acrobat does.
