I have an iPad and want to use it in a corporate application where I can download an Acrobat X reader enabled form, fill it out, and email it back to the office.

Adobe Reader for the iPad does not support form. There are other PDF viewers that do to some degree. The best at this time is probably Readdle's PDF Expert since it also has some support for JavaScript.
