how do i rename a page in my PDF?

I want the "cover" of the PDF to be called "cover" instead of "page 1", "table of contents", etc.

how do i do that?

i'm using Acrobat Pro version 9.5.5 on a MacBook Pro running OsX version 10.6.8.

It is possible, but only manually.

Open the Pages panel on the left. Right-click the page and select Number Pages. Under "Pages" select "Selected". Under "Numbering" select Style: None, Prefix: Cover, Start: 1, and click OK.

Short answer - Not possible.
What you describe involves use of PDF "Page Labels". Page Labels are discussed in 12.4.2 of ISO 32000-1 (The ISO standard for PDF which describes/defines what PDF is).
.

You might achieve the desired effect by use of Headings denoting "cover" etc. in the authoring file's content. The output PDF's page content would, of course, contain this.

Be well...

Setting the page labels only changes the value displayed in the page display window and optionally in the Print UI. You may also need to change the Preferences for Acrobat/Reader for Page Display to "Use "Logical Page Numbers"

If you want the footer of header of the pages to show this information you need to edit the pages content.
