when i delete pdf's from my documents folder, they remain in adobe reader x file menu. how does one delete these?

That is the MRU, Most Recently Used, list and not a file directory listing. You can set the displayed history to zero files and restart Reader to clear the history. Another option is to edit the resitry file.
how is this done in adobe X1? can't find the settings you've suggested.

To be clear - there is no "Adobe X1". There is "Adobe Reader" (XI) and "Acrobat" (X). With either open you open the application's Preferences dialog.
At the left side of the dialog there is a list of "Categories". Select "Document".
Locate "Documents in recently used list".
