Was the text entered in an actual form field? Did you create this form? or was it supplied to you? Do you have acrobat or the Free adobe Reader. Is it a form that you could share?
It could be possible that on entering the data, the form could be set up to automatically make the field Read only.
Have you signed the PDF? This could prevent changes.
