The easiest way to do this is to use the Combine Files dialog in Acrobat XI Pro. to build the portfolio. In the Combine Files dialog you can simply drag and drop the various email from your client. To create a PDF of the calendar and tasks in Outlook, you'll need to print these to the Adobe PDF printer and then add them in the Combine Files dialog.
Next, select the Options button in the Combine Files dialog and select Portfolio.
This will automatically build a PDF Portfolio with all your Outlook client information.
