So I did a bit of research, and it seems that the equivalent location of the registry settings on a Mac is plist file, located here:
Users/<user name>/Library/Preferences/com.adobe.<product name>.plist

So based on that I created the following XML pattern that should disable the echoSign Signature Detection feature.
